I trained as a traditional French chef in Kansas City, mastering the formal techniques and learning how to work efficiently on a large scale at the Westin-Sheraton Convention Complex in Downtown Kansas City. I helped manage 7 different restaurants as well as helping when needed in catering where we had anywhere between 500-10,000 people.
My time at The Phoenician, a 5 Star 4 Diamond Resort, deepened my appreciation for fine dining and high-quality ingredients. I helped run 4 restaurants and eventually was given The Canyon Suites to run as my own, and while I was there, we achieved the 5 Star 5 Diamond status for our food. It’s one of my most proud moments as a team.
But the culinary arts isn’t an easy job on the body and life hit me hard with health challenges—diagnosed with MCAS, ADHD, EDS, and Dysautonomia, I faced debilitating symptoms that left me bedbound for months, struggling with a wrecked microbiome and a weak immune system.
As I heal and reclaim my life, I’m dedicated to sharing this knowledge. That’s why I launched Nourishing Holistic Meal Prep. My mission is simple: to provide real, nutritious meals to my community and help others like me achieve their health goals while enjoying truly delicious food.
